Nusa Dua, Bali – [6 July 2024] – The Westin Resort Nusa Dua Bali is delighted to announce a series of groundbreaking sustainability initiatives aimed at reducing waste and promoting environmental stewardship across all its restaurants and facilities. These efforts reflect our unwavering commitment to sustainability and the well-being of our community and planet.


At Ikan, one of our main restaurants, nearly 95% of the ingredients are sourced locally, with sustainable dishes inspired by local delicacies and childhood recipes from our culinary team’s respective home. Some of these special dishes include:
- Bulung Sawangan by Executive Pastry Chef Michael Leuwol
- Pacri Udang by Junior Sous Chef Andri Liani
- Pindang Jimbaran Robroban Kelor by Sudiartha DCDC
- Seafood Ceviche with Garang Asem Émulsion by Marcellino Julian, Sous Chef


Food Waste Segregation
In partnership with Kelompok Mekar Sari, we have introduced a comprehensive food waste segregation program in all dining outlets. Waste is meticulously separated into dry and wet categories to ensure proper disposal and recycling.
Recycled Chopsticks & Skewers by ChopValue
We have collaborated with ChopValue, an innovative company that repurposes used chopsticks and skewers into high-quality, eco-friendly products. Dedicated collection bins have been placed in Hamabe’s kitchen and the associates’ dining room to collect used skewers. Guests and associates are encouraged to contribute to this initiative. Additionally, our beach and pool seating areas feature wooden dice QR codes made from recycled chopsticks, providing menu and resort information.


Food Donation with Scholars of Sustenance (SOS)
Marriott Business Council Indonesia proudly supports the humanitarian efforts of Scholars of Sustenance (SOS) Indonesia through the launch of the “Sadeva” food truck. This initiative, funded by proceeds from the Road To Give 2023 charity event, aims to reduce food waste by distributing surplus food to those in need. “Sadeva” extends the mission of the first food truck, “Doa Ibu,” to the communities in Nusa Dua and Jimbaran, Bali.
Zero Waste Cocktail
Our culinary team led by Marlon Hermanto, Beverage Manager creatively utilizes leftover products such as wine spoilage and overripe fruits to craft unique beverages. This zero-waste cocktail initiative reduces food waste while offering guests a distinct and memorable dining experience.


Additional Sustainable Efforts
Plastic-Free Room Amenities: We are transitioning to eco-friendly, non-plastic packaging for residential bath amenities. Bio-degradable shower caps, combs, and toothbrushes made from wheat are now being provided in all guestrooms.
